Local Chefs put a little oompah-pah on your plate at Kitchener-Waterloo Oktoberfest's Stein & Dine Event


MEDIA RELEASE (Wednesday, July 26, 2017) Kitchener-Waterloo Oktoberfest, in partnership with Molson Coors Canada, is thrilled to announce this year's local connection to our incredibly popular Stein & Dine Culinary Experience. This year we welcome three unique chefs taking over the local culinary scene - Chef Darryl Fletcher (ChefD), Chef Dan McCowan (Red House, Waterloo) and Red Seal Chef David Pyper (Sobeys). Stein & Dine will take place Thursday, September 7, 2016, at the Inn of Waterloo.

"We couldn't be happier to welcome such local talent to our Stein & Dine line-up; ChefD's take on a Bavarian inspired plate, along with the experience Chef Dan McCowan brings, and we're sure to see unique and exciting flavor pairings. Chef David Pyper will provide a technical insight into the culinary world of cooking. These distinguished Canadian Chefs will raise the standard of this culinary one-of-a-kind event" says Dave MacNeil, Kitchener-Waterloo Oktoberfest Executive Director.

Each of the chefs will prepare a Bavarian-inspired course, in front of a crowd of over 250 guests at this unique Oktoberfest culinary experience. Each course will highlight traditional Bavarian foods, and a specially selected Molson Coors Canada beer will be paired with each course, by Canadian Beer Cicerone Justin Lamontagne.

Chef Bios


Chef Darryl Fletcher's (ChefD) inspiration to pursue a culinary career began while watching Graham Kerr (The Galloping Gourmet), and trying some recipes at home. He is a graduate of the Chef program from Humber College in Toronto, Canada.

ChefD's career, as a Chef, has grown from humble beginnings in Kitchener, to all over North America, eventually returning back home to Kitchener. He has worked with wonderful people, at companies such as: Weber's Restaurants, M&M Meat Shops, and Aqua Star North America. ChefD and his recipes have been featured in Canadian Living, Foodservice and Hospitality magazine's Chef's Corner, various cook books, as well as appearing as a popular guest on CTV News at Noon Kitchener, CTV Vancouver, CTV Edmonton, City TV's Breakfast Television, CHCH Morning Live, and Kitchener's Rogers Daytime and Inside Guelph on Rogers TV.

ChefD launches his fifth season of his popular cooking show, 'At Home with ChefD' on Rogers TV. He is the author of two cook bookettes, Maple Madness, and Garlic Madness and has a weekly radio show 'At the Kitchen Table' on FAITH FM. ChefD has prepared meals for the likes of the late BB King, the late Stuart McLean, Blue Rodeo, Michael Buble, Big Bad Voodoo Daddies, Diana Krall, and many others.

ChefD is the popular host of ChefDtv.com; an innovative online cooking show, in addition to creating new recipes and flavour profiles for Piller's Fine Food, Gold Seal, Gay Lea Foods, Kenwood (DeLonghi), Grand River Foods, and Nutrafarms Inc.

ChefD believes in sharing his passion for food with others, and keeping recipes simple, easy, and incredibly tasty!

Chef Dan McCowan, Red House

Chef Dan McCowan Record Reader's Choice 2016 & 2014 Diamond winner for Favourite Local Chef Ontario hostelry institute award for top 30 under 30 hospitality professionals in 2010.

Chef Dan McCowan was born in Scarborough, Ontario but grew up here in Kitchener-Waterloo. He graduated from the Chef Apprentice program at George Brown College in the summer of 2003, and quickly after that received his Red Seal Certification.

Though his culinary career humbly started as a dishwasher at a local fish n' chips shop, he always took pride in his craft, constantly seeking opportunities to learn, and to move up the ranks no matter what kitchen he was in. He steadily worked his way through many different positions & challenges during his apprenticeship, wanting to continually diversify and expand on his skill set.

He moved to Toronto to gain some big city experience while enrolled in Chef School in 2001. This decision was the most influential and inspiring of his young career. While learning new cooking techniques and ingredients on a daily basis, he also was exposed to a taste of real chef culture in the city, being constantly exposed to new food, new flavours & passionate cooks who could talk about nothing but food (and music) until 4am. It was while working as a saucier at Oliver & Bonicini's jump cafe in Toronto that he decided he'd always be a chef. Upon returning to the region, he spent his days with The Charcoal Group of restaurants. There, he was given the opportunity to run several different kitchens for the local company, including his first head chef position at Del Dente at the age of 23, being selected as the opening Chef de Cuisine for Uptown Waterloo's Bauer Kitchen by 26, and Executive Chef for the flagship Charcoal Steakhouse & Martini's restaurants by age 29.

Dan truly enjoyed each stop along the way of his career, but it is with great pride that he welcomes his guests to his first independent restaurant venture Red House in Uptown Waterloo, to experience his fresh, original cuisine, and genuine hospitality.

Chef David Pyper, Sobeys

David Pyper holds a Red Seal in the cook trade, which he obtained in 2004, along with many years of experience working as a chef. Mr. Pyper is versed in various avenues of the hospitality industry such as hotels, five-star Diamond Relais et Chateaux properties, celebrity chef-owned restaurants, and private homes of celebrities.

He currently works in a corporate retail environment with Sobeys, where he teaches and grows food experience and knowledge. Previously, Mr. Pyper was a member of the College's Service Divisional Board. He hopes his knowledge and experience will contribute positively to decisions made on the Board of Governors.
